Under the direction of the Food Service Supervisor I/II and/or Supervising Cook I/II, the incumbent leads, instructs, observes and works with employees engaged in preparing and serving meals, cleaning, and maintaining work areas, food service equipment and utensils.
Must follow serving instructions for therapeutic diets.
May be in charge of a dining room, central pot-washing room or vegetable room, or clean up operations in a bake shop or other comparable assignments.
Supervises the serving and portion control of food.
Assigns posts to dining room employees.
Trains and instructs others in preparation and serving methods and sanitation standards.
Supervises and assists with table setting, dining room preparation for meal service, cleaning of tables after meals, and maintenance and arrangement of a dining and serving area, equipment and utensils.
Maintains uniform food-handling practices and standards of safety and sanitation in an assigned dining room.
Observes and reports on residents' attitudes toward foods served.
Keeps food acceptance and plate-wastage records.
Orders, receives, and supervises storage and inventory of supplies; keeps records and makes reports.
Observes and assists with intervention in instances of disruptive or assaultive behavior of the resident population.
Assists in the counting, distribution, and accounting for all utensils to prevent their use as weapons.
Knowledgeable of the various types of dining room and service utensils and equipment and their uses.
Kitchen and dining room sanitation and safety measures.
Methods of cleaning and preparing foods for cooking and storing food.
Knowledge of general pantry operation.
Inspects work areas/facility to identify security breaches that could lead to client escape, and observing and intervening in client behavior that may signal an impending escape attempt.

Working Conditions PHYSICAL DEMANDS: Must possess and maintain sufficient strength, agility, endurance and sensory ability to perform the duties contained in the duty statement.
Must have full range of body motion and be able to lift, push and pull.
Corrected vision must be to normal range.
Manual finger dexterity/hand-eye coordination required.
Requires standing and walking for extended periods of time.
Involves frequent heavy lifting up to 50 pounds maximum, often combined with pushing, pulling, bending, stooping, squatting, grabbing, carrying, kneeling, twisting and reaching at, or above shoulder level.
Includes sitting, standing and walking most of the time, with or working on, irregular surfaces; and occasionally requires extraordinary physical activity.
TYPICAL WORKING CONDITIONS: Exposed to varying temperatures and loud noises.
Work areas include industrial food service equipment.
Works around wet surfaces.
Some contact with residents with unpredictable behavior.
Potential exposure to communicable diseases, body fluids, pesticides and cleaning chemicals.
Required to work under stressful conditions at times.
